In an interview, give a caterer as clear an idea as possible of your plans - the date, time, number of guests, location, style - and ask for appropriate menu suggestions. Ask too if he thinks your plans are good (sometimes they are not, and he will know from experience). Request approximate prices, and if you have a strict budget for food and service, inform the caterer, for if he is creative and wants the job, he will usually be able to work within that context.
